Butter Cookies

    250 g butter *

    1 1/2 cups icing sugar

    3 1/2 cups all purpose flour

    Family secret:
    The oldest and simplest butter cookies are from my grandmother’s recipe book. Original butter cookies had three ingredients: pure butter, sugar, and flour. Purifying the butter is the secret of this recipe. Although, there are many recipe variations with several additions or flavour agents, the simplest is the most favourite to me. It has an original and finest taste; extremely buttery, crumbly, and melt-in-your-mouth texture!

    PURIFYING THE BUTTER
    A perfect butter cookie requires a pure butter.
    For homemade purifying process; from the previous day, place the regular butter into a saucepan. Bring it to a boil and boil it for 3 to 5 minutes on medium heat. The butter will melt, boil, froth, and become translucent.
    By the end of this process, the butter will have a bright golden colour. Drain the butter using a strain. This method eliminates milk and other food additives in the butter. Pure butter stimulates the consistency of the dough and the flavour of the cookies.
    Place the pure butter in the refrigerator to solidify again.
    Note: This recipe requires 250g of pure butter. Purifying process reduces the amount of butter. Make sure to start the process with a minimum of 280 g of butter.
    PREPARATION
    Take the butter out of the refrigerator. Divide it into small pieces while it is still cold.
    Place a parchment paper in an oven tray.
    COOKIE DOUGH
    In a large bowl, combine the butter and 1 ½ cups of icing sugar and knead together
    The butter will melt slowly with the warmth of your hand; mixture turns into a very soft dough.
    At this stage, add the first two cups of flour separately while kneading. Then, add the rest of the flour in half-cup increments while continuing to knead.
    You will obtain a soft and almost crumbling dough; the dough is ready to form the cookies.
    FORMING
    Take an orange-size cookie dough and make a ~2 by 30 cm size strip.
    Then flatten the strip and make decorative lines on top using a fork.
    Cut the strip diagonally into ~3 cm-sized cookies
    Then gently place on the oven tray
    Since the dough is very soft, cookies will be very fragile in this stage handle them with care.
    COOKING
    Heat the oven to 380 °F
    Cook the butter cookies for 23 to 25 minutes in the oven; when the cooking is completed, cookies should be white in colour and hard enough to handle without damaging them.
    Once cooking is completed, place the oven tray on a rack to cool down the cookies .
    SERVING
    Serve the cookies along with a cup of tea or coffee with a deep chat and socialize with pleasure.
